3 alcoholic ice pops you need this summer

Summer holidays have arrived - bring on the beach, theme parks, city breaks, trips with the children, grandchildren and relatives! Phew – what about time to relax and unwind?

Well perhaps we can help. On those warm summer evenings, what could be better than treating yourself to an alcoholic ice pop? (Yes please!).

We’ve pulled together mouth-watering recipes for you to try at home. One thing to bear in mind – make sure you don’t use more than 20% alcohol in each pop, otherwise it won’t freeze! So for example, if you’re making a G&T – stick to 20% gin and 80% tonic.

G&T with lemon and cucumber

Ahhh a classic drink...that’s why we’ve kept this one simple, simply make a G&T – and freeze! Recipe courtesy of/adapted from tamingtwins.com

What you'll need

  • Ice lolly moulds or ice pop bags
  • 750ml tonic (left to go flat)
  • 75-150ml gin (tip – if using more alcohol, we’d recommend using ice pop bags as they won’t be as firm as an ice lolly!)
  • Juice of 2 lemons
  • Half a cucumber diced into small pieces

Instructions

Mix all the ingredients together, then pour into moulds or bags and freeze overnight.

Mojitos

Once you’ve tried these Mojito ice lollies, all you’ll want to do is kick back and day dream about being whisked away to a beach on the Cuban coast! Recipe courtesy of/adapted from womenshealthmag.co.uk

What you'll need

  • Ice lolly mould or ice pop bags
  • 500ml water
  • 155g granulated sugar
  • 20g fresh mint leaves – plus extra 20 extra leaves
  • 5-6 limes
  • 50-100ml rum (like the G&T recipe – if you’re using more alcohol, then use pop bags as they won’t freeze as firmly!)

Instructions

Heat the water and sugar in saucepan, once boiling remove from the heat and add 20g of mint leaves. Cover the pan, and leave to refrigerate overnight.

Once steeped, take the syrupy mixture and strain through a fine sieve – make sure you squeeze any juice you can from the mint leaves!

Finely chop half of the remaining mint leaves and add to the syrup with lime juice and rum.

Pour the mixture into your moulds, adding a thin slice of lime and a mint leaf into each and freeze.

VODKA AND WATERMELON....CAT’S VERY OWN RECIPE!

What you'll need

  • 50 – 100ml vodka
  • Quarter of 1 watermelon, crushed
  • 1 tbsp sugar
  • 1 packet of blueberries

Instructions

Take the crushed watermelon into a large mixing bowl, and pour in the vodka, sugar and blueberries. Once all mixed together, pour into your moulds or ice pop bags and freeze overnight!
